Nestled in gently rolling slopes of vineyards sets the picturesque Le Mas de la Treille. Home to “The Provence Culinary Experience”. Classes for four are designed to teach the cuisine of Provence, using local and seasonal products.  This small group of students allows for lots of hands on experience and personalized attention.

Your Experience

Each day the class and spouses or partners, who are not in the class, take trips to nearby vineyards, wineries, markets and other culinary points of interest. Most frequently we are purchasing the ingredients for our next meal and meeting the cheese maker, baker, farmer etc.  Additionally there is free time to shop and sightsee as each day the class is limited to 4 or 4.5 hours.

Your day begins with a traditional French breakfast on the main floor, consisting of delicious, fresh pastries from the local Patisserie , homemade marmalades, juice, coffee, tea and fresh fruits and yogurts. After breakfast our daily excursion begins and we visit interesting places for shopping and sightseeing.  One day we dine out for lunch and hold our class in the afternoon, preparing our evening meal. One evening we dine out, having prepared the midday meal beginning directly after breakfast. Each day there is time left for relaxing, swimming, tennis, hiking, biking, and numerous other activities? All meals are served with appropriate wines when dining in. and a selection of wines at our dining out excursions.  All in moderation but selected to enhance the dining experience. For the classes you will receive printed recipes to in a lovely binder.  Additionally you will receive a “Provence Culinary Experience “apron to take home.

Getting There

We recommend you fly into Paris and take the TGV train to Avignon, where we will pick you up in our van.  All ground transportation is provided during your stay.  We can assist you in purchasing your TGV tickets and seat reservation.  Many people like to add an extra week or so to their trip and we can recommend numerous places to visit before or after you r stay with us.

The Group

Each group may consist of up to 8 individuals, with four taking the classes.  Many activities are available to those not cooking. Each group must arrange themselves, of friends or relatives, keeping the experience congenial with people you know and like and can share the memories with later.

Karen Mitcham-Stoeckley from The Eagle’s Nest in Louisiana, Missouri, the main instructor.   Karen has a long history in the culinary world beginning in the 70’s as the Culinary Consultant to Le Creuset and Cousnaces, the renowned French cookware. She has been a food writer for various publications for many years and is the executive chef at The Eagle’s Nest Bistro & Restaurant.  Her studies of cooking have taken her to France, Italy, Japan and through out the USA.  Classes with Karen will be hands on and reflect her love of Provence.

Albreic and Son, owners of Le Mas de la Treille will guest teach a class and also be our tour guides to the wineries, markets and dining out.  Albreic hails from Paris and Son has relocated there from Saigon Vietnam. Together they have created a virtual haven of simplicity and elegance in the merging of French & Oriental antiques.  Both are experts of local cuisine and present a table of exquisite tastes and textures.
